A few weeks ago, crumbl cookie released a cookie flavor named Cowboy cookie. I was confused on the name so it led me to do research and I learned it’s a very popular flavor worldwide and that it isn’t the store’s creation. I instantly began my search online to find the best recipe that seemed healthier and easier to make at home because I could not get rid of the craving. After trying two recipes I found this one is my favorite one so I wanted to share it.
A cowboy cookie is essentially an oatmeal cookie filled with coconut, chocolate chips, and pecans.Its a simple recipe that does not require much. The ingredients you will need are butter (it will be browned), sugar, eggs, vanilla extract, flour, baking soda, cinnamon, salt, old fashioned oats, shredded coconut, pecans, and chocolate chips.
Preheat the oven to 350 (F) and line two large baking sheets with parchment paper. In a large bowl you then mix the eggs and both sugars together, whisk then add the vanilla extract. In a separate bowl you mix the flour, baking soda, cinnamon, salt, oats, coconut, and the chocolate chips. After both bowls are thoroughly mixed, you then add the dry ingredients into the wet ingredients and mix. You then form small balls with the dough and add to the prepared baking sheet. Bake the cookies for 12 minutes or until golden brown. Once the cookies are out of the oven, you can add chocolate chips and pecans on top if you’d like. These cookies are very easy to make and are on the healthier side.
