My mom used to be the best cook of my family. However, she decided she was going on her health journey and wasn’t going to cook anything she wasn’t going to eat. So basically she left me to fend for myself and the only thing she would make me is salads. Her salads are the best so I’m not complaining (well not that much at least). I don’t remember exactly what she put in the salad but here’s the gist:
- spring salad mix
- tomatoes
- avocado
- red onion
- olives
- pepperoncinis
- gorgonzola cheese
- parmesan cheese
- side of lemon
