During spring break it was my cousin’s birthday. In my family I’m known as the cooker and baker so of course she asked me to make her a homemade cake for her birthday. Truthfully before this I had never even attempted to make a cake so I was a little scared to make this, especially if I’m making it for like 20 people since it was for a party. In the end I decided to go with something simple, a strawberry and buttercream vanilla cake.
I first used 2 boxes of super moist vanilla cake mix, 8 eggs instead of 6, milk instead of water, butter instead of oil, and added sour cream. It’s not all the way homemade if you want to be technical but I think my additions made it taste more homemade and just better overall. For the buttercream frosting I used 2 cups butter and whipped it until it was white then added 3 cups of powdered sugar (only 3 cause my cousin didn’t want it too sweet) as well as a splash of vanilla and heavy whipping cream. For the strawberries I obviously washed them then picked out the most pretty ones to go on top of the cake as decoration. As for the rest of the strawberries I chopped them up and marinated them in some sugar and lemon while I made the frosting. I then layered it cake, frosting, strawberries, a lil more frosting, repeat, repeat (you get the idea).
The cake turned out so pretty and IT TASTED SO GOOD! I let it sit out on the counter with only saran wrap over it for 24 hours and IT WAS STILL MOIST! Everyone absolutely loved it and before the end of the night half the cake was already gone! My cousin was very satisfied with her gift! It was a 10/10 and I don’t even like cake like that. I’m so so so proud of myself for this cake especially since it was my first time!
